What Inspired PARC Aspen?
Aspen has always had that charm, unlike any other ski town of its kind; offering a little something for everyone. Over the years, that little something has started to fade as more and more hospitality groups flood the scene to open the “hottest” spots in town.
When the doors to three of Aspen’s longtime favorite local haunts shuttered in 2021, Maryanne & Harley Sefton saw this as the opportune time to strike. They secured the perfect location to put their mission statement into motion; “Bringing Local Back to Aspen, One Curated Dish at a Time”. The space in question, formerly held by L’Hostaria, has a 38+ year history of being locally owned and operated restaurants.
Having owned in Aspen for over 25 years and becoming full time residents in 2018, Maryanne & Harley plan to preserve the legacy left behind with a new, fresh perspective in PARC Aspen. The restaurant name was inspired by their first attempt at a restaurant concept right off of Wagner Park in town, and when that didn't happen, they decided to keep the name as it was very fitting for a farm to table restaurant.
Dining at PARC Aspen will be an unmatched experience that Maryanne and Harley hope will drive visitors from all around to become locals! The plan is to offer three distinct dining opportunities: a modern locals bar, contemporary fine dining room and an exclusive wine and chef paired private dining experience. Each menu will feature seasonal, farm to table fare with a European flair: an elevated bar menu featuring local flavors, a curated fine dining menu crafted to explore the senses, and a wine & chef paired private dining experience to wow even the most cultured diners.
