The Kitchen

Led by Chef Stefano Schiaffino

PARC Aspen is recognized as one of the best restaurants in Aspen, where Chef Stefano Schiaffino blends French discipline with his Peruvian heritage and global experience. From Cast Iron–Seared Steaks to Organic Salmon and Elk Loin, our menus highlight Colorado’s seasonal ingredients with a refined, worldly perspective.

PARC Aspen is home to one of the most distinguished wine programs in Aspen, featuring over 1,300 curated labels from iconic estates and emerging producers worldwide. Recognized with Wine Spectator’s Best of Award of Excellence, our list highlights Champagne, Bordeaux, Burgundy, and standout selections from Italy, Spain, and leading American regions, each chosen to complement our seasonal menus.
